Mom's Lasagna - Recipe 2


This is a recipe for Mom's Lasagna, a Hensley family staple. I think she fixed this EVERY TIME I came home from college!

  • Lasagna Noodles (1 box)
  • 1 1/2 lbs. - 2 lbs. ground beef
  • Medium onion
  • 1 large can diced tomatoes
  • 1 large can tomato paste/ water
  • 1 large container cottage cheese
  • 3 eggs
  • Mozzarella cheese (3 or 4 packages of sliced and 1 package of shredded)
  • Parmesan cheese
  • Salt / garlic salt / pepper
  • Italian seasoning
Boil the noodles according to directions on the box. Brown the onion.Brown the ground beef and drain excess fat. Add diced tomatoes, tomatoes paste and water. Season to taste (salt / garlic salt/ pepper/ Italian seasoning). Stir often and cook 25 minutes on med/ low heat. Mix cottage cheese and eggs. Layer in 9x13 dish: noodles, sauce, cottage cheese mixture, cheese.
On first layer just put sauce then noodles. On the last layer top off with shredded Mozzarella and Parmesan cheese. Bake at 350 for 1 hour! Bon Appetite!
